In La Guajira we have plenty of creativity and this is what we did … We mixed and made a redisher of corozo and panela, which resulted in the exquisite Asawaa® Handcrafted Guajiro Liquor, which rescues a traditional guajiro product popularly known as chirrinchi.

Inspired by this tradition and based on what we do in our artisan distillery, certified with Good Manufacturing Practices (BPM in Spanish), we explain how the process of creating the Asawaa® Handcrafted Guajiro Liquor

Mix filtered water, yeast, panela and corozo. Dissolve well and then leave fermented for an estimated time of 10 to 15 days so that sugars from panela can be consumed effectively and can become alcohol. There variables such as Ph, Brix, density and temperature are controlled.
Then follow the distillation. In which the fermentation is placed in the still, so that it boils and starts the distillation process by going up a connector in a gaseous state.
Then it goes through two condensers where it goes from a gaseous state to a liquid state and the alcohol concentration is adjusted to 50%.
The liquid returns to the still to go through a second distillation, which is what we call re-distillate. With this, what is sought is to increase its concentration in alcohol to 70% and remove the components that cause hangover discomfort.
The concentration of alcohol thrown is hydrated with previously distilled water to lower the concentration of alcohol to a percentage of 35%.
At the end of this, the secret touch of the Handcrafted Guajiro Liquor Asawaa is added and it goes through a filtrate to guarantee the quality and good taste of our liquor.
It is packaged and labeled.
